The Festival of Colours

Last Wednesday, the Poetry Circle was on the topic of Colours, and it was also the Indian festival of Holi. The members shared some lovely poems, including this one written by Poetry Circle member, Rajul.
The festival of colours in India is called Holi
Where you can see red, yellow, and pink in full glory
It indicates the arrival of spring
A lot of excitement it will bring
I wait for this festival of colours each year
To celebrate it with those who are near and dear
Big, small, young, old, girl or a boy
They all come out to sing and dance with joy
They put colour on each other’s face
And carry it out with dignity and grace
Everyone is out to bond and have fun
Forgive and forget all hurts and be one
Every time we celebrate Holi, we make memories to cherish
The significance of Holi is that good prevails, and evil shall perish.
Ramadan Recipes
Emirati Luqaimat
We had some delicious food at our Ranches Ladies Pre-Ramadan Iftar and some of the ladies have been kind enough to share their recipes. This week, we have luqaimat from the UAE. Luqaimat means “small bites” in Arabic and that’s exactly what they are: small bites of sweetness.
INGREDIENTS
1 cup all purpose flour
½ tsp instant yeast
½ cup milk powder
2 tbsp sugar
½ tsp cardamom powder
pinch of saffron
lukewarm water as needed approximately 1/3 cup
oil for deep frying
1/2 cup date syrup or more for dressing
1 tbsp sesame seeds for spinkling
INSTRUCTIONS
- Add all purpose flour, yeast, milk powder, sugar, cardamom powder and saffron in a bowl and mix well.
- Slowly add water while gently mixing with your hand to get a sticky batter. The batter will be more like a dough than batter.
- Cover with a muslin cloth and allow to rest for a couple of hours in a warm place till it has doubled in size
- Heat oil and drop the batter by spoonful. (Dipping the spoon in water in between prevents the batter from sticking to the spoon and makes it easier to drop.
Roll the dropped balls with a slotted spoon in oil for even cooking. Fry till they are dark golden brown in color. - Remove from oil and place on a kitchen towel.
- Place them in a serving bowl and pour the date syrup on top, sprinkle with sesame seeds

New Circle – Cooking with Leila
Leila Barakat’s Culinary Journey
Leila Barakat Mukhaimer brings a wealth of culinary expertise and international experience to the table.
Leila is a member of the International Culinary Institute “La Chaine des Rotisseurs” in Paris, and has a Bachelor of Business Administration from the American University of Beirut and a Diplome de la cuisine Francaise from France.
Leila’s culinary journey began with a strong foundation in both International and Arabic cuisine. Throughout her career, Leila has continued to expand her culinary horizons, attending a culinary course in Thai cuisine at the Oriental Hotel in Bangkok in 2005, further enriching her repertoire of flavors and techniques. Leila’s passion for healthy eating and sharing her knowledge has led her to conduct hands-on culinary demonstrations for prestigious institutions and food festivals in Dubai and worldwide. Leila is also an accomplished author, having written the internationally acclaimed cookbook “Dishes Made Delicious” in 2003, and published weekly articles for Al Hayat newspaper in London, U.K. in the 1990’s. With a diverse range of interests spanning sports, travel, and a passion for exploring different cultures, Leila brings a unique perspective and boundless enthusiasm to her cooking demonstrations, inspiring others to embark on their own culinary adventures.

Poetry Circle
The theme for the next Poetry Circle, on Monday 29th April, is ‘Food.’
The Poetry Circle usually meet once a month to share and discuss poems on a theme.

Walking Fitness Circle
The Walking Circle are making the most of the cool weather with early morning walks on Mondays.
Meet on Monday mornings at 7am outside the main entrance of Arabian Ranches 1 community shopping centre.
We will walk for approximately 1 hour 20 mins depending on route and distance. Option to stay for tea/coffee afterwards back at the community centre. New ladies are welcome to join.
